Brewing kombucha (June 2018)



Three tablespoons of tea, a cup of sugar, water, and SCOBY.  How hard can it be to brew your own kombucha (fermented tea)? A SCOBY is a zoogleal mat--that is, a mass of bacteria and yeast, tied together with cellulose nanofibers.  

The first batch is going through a second fermentation in 16-ounce bottles to add carbonation.  You add a half teaspoon of sugar to each of the bottles before pouring in the first fermentation.  Brewing on the floor of the closet in my office.  I'd been buying kombucha, as you can see from the boxes, at about $2 per bottle.  You can brew a gallon at home for about 80 cents.
