OK, it was called "huitlacoche" on the menu, not "corn smut." The taste was mushroom-like and earthy. Corn smut is a fungal disease that grows on ears of corn, gradually consuming the kernals, turning them black inside. Huitlacoche is a delicacy in Mexico.
